Story Title: TVo’s Laksa
Chilli Paste Ingredients
Tbsp sriracha
Tbsp minced chilli
Tbsp sunflower oil
1/2 tsp sugar
1 1/2 tsp laksa paste
1 tsp soy sauce
1/2 garlic
Laksa Ingredients
- Lemongrass
- Knob of ginger
- 2 cloves garlic
- 1 x 400g can of coconut milk
- 1-2 tsp fish sauce or salt if you don’t have any 500mls or more
- Chicken stock Limes maybe three
- 4 pieces thigh or 2 breast shredded
- Tofu cut in cubes
- Vermicelli noodles
- Fried shallots
- Herbs Mint or coriander
- Asian Greenaway like bok choy or Chinese broccoli
Recipe
- Pour your oil into a medium heat pot.
- Add lemongrass, ginger and garlic to the pot.
- Add laksa paste and mix it in.
- Pour your coconut milk and chicken stock into the pot.
- Add fish sauce for saltiness, then add the lemongrass stalks.
- Mix 2 teaspoons of chilli paste in
- Simmer with the lid on over low heat for 10 minutes
- Break up your bok choy and heat it in water – don’t leave it for too long, as you want to keep the crunch.
- Put your noodles, poached chicken, bok choy and tofu into a bowl.
- Pour the laksa sauce over
- Garnish with shallots, coriander and lime.
