Pancakes with Strawberry & Balsamic Jam

Ingredients – Strawberry and balsamic jam.

  • 500gm of Strawberries – diced into small pieces
  • 1 tablespoon honey
  • 1 teaspoon vanilla paste
  • 1 cinnamon quill
  • 1 star anise
  • 1 tablespoon balsamic vinegar

Ingredients - Pancakes

  • 1 egg
  • 1 cup self-raising flour
  • 1 teaspoon honey
  • 1 tablespoon melted butter
  • 200mls milk
  • Thickened cream
  • Icing sugar
  • Pinch of salt
  • Pinch of baking powder
  • 6 strawberries cut in half (12 pieces)

 

Method

  • Start on the Jam first.
  • Place the diced strawberries in a large pot, add the honey, vanilla, cinnamon and star anise.
  • Over a medium-high heat, bring the contents of the pot to the boil.
  • One the mixture is boiling, reduce the heat to medium-medium low.
  • Simmer for 10 minutes stirring time to time, reduce the heat to low and add the balsamic vinegar.
  • Stir and simmer for a further 5 minutes and remove from the heat.
  • Transfer the contents to a bowl or jug and bring to room temperature.
  • To make the pancakes, whisk an egg in a large bowl then top with the milk and melted butter.
  • Using a fork whisk the ingredients together, cover with cling film and let it sit for 5 minutes before using the mixture.
  • Use a thick based pan on a medium heat, melt 1 teaspoon of butter and place 2 teaspoons of mixture per pancake and top with 2 strawberry pieces.
  • When the pancakes start to bubble (roughly 3-5 minutes) flip the pancakes and cook for a further 2 minutes.
  • Remove from the pan, stack pancakes around a plate and top with the jam.
  • Serve with a dust of icing sugar and a dollop of thickened cream.
