Guy Jefferys grows all of the fruit and veg use in the Millbrook Winery Restaurant- it’s real paddock to plate cooking. Today Guy makes us a delicious desert filled with fresh berries.
Ingredients
Mascarpone:
- 2lt bannister downs cream
- 1 orange, zested and juiced
- 1 lemon, zested and juiced
Parfait:
- 8 egg yolks
- 250g castor sugar
- 500g of above mascarpone, or buy some from the shop
- 150ml bannister downs cream, whipped to soft peak
- Shortbread-
- 100g unsalted butter
- 60g castor sugar
- 160g plain flour
To serve:
- A few handfuls of berries
Method:
- A few days before Christmas make the mascarpone by gently boiling the cream and zest for 3 minutes, then add the juice and boil for another 7 minutes. Pass through a sieve to remove zest, let cool a bit then hang in cheese cloth till thick, which will take around 48hrs. When mascarpone is ready remove from cheese cloth.
- To make the parfait place egg yolks and sugar into a stainless-steel bowl. Place the bowl over a pot of simmering water and whisk the yolks and sugar. Keep whisking until thick and at least tripled in size. Take off the heat and whisk until cool. Fold in the mascarpone and then the whipped cream. Pour into a terrine mould and freeze overnight.
- To make the shortbread beat the butter and sugar until creamed, then fold in the flour. Put pastry in between 2 pieces of greaseproof paper and roll out thin use a rolling pin. Place on a tray and bake at 160c for 15 minutes, remove from oven and cool, then snap into shards.
- To serve go into the garden and pick some berries, or make sure the ones you bought are at room temperature. Turn terrine out onto a plate and let stand for 15 minutes so it’s not a solid brick. Throw berries all around the terrine and snap shortbread over to finish.
