  • Asparagus is rich in fibre, folate, vitamins A, C, E and K, as well as chromium, a trace mineral that enhances the ability of insulin to transport glucose from the bloodstream into the cells. This is great for those watching blood sugar levels.
  • Asparagus is grown from crowns. These crowns have to be at least 2 years old to allow you to pick stalks in the spring.
  • There is technically three colours of asparagus – green, white and purple, which is 20% sweeter than the green, as well as being richer in antioxidants. Green asparagus has more fibre.
  • White asparagus is manipulated from the green, grown in the dark so that no clorophyll is produced. This takes away a lot of the bitterness.
  • Winter is the time to plant asparagus. Make sure to plant in free draining soil in full sun.
