Theo visits a local Perth family business who supports local farmers and business and have been using the same recipe since 1974 to create their famous Italian Sausages.

  • Princi Butchers is a 45-year-old Italian Family business who have been raising and sourcing the finest quality meats available. They not support local farmers and businesses, but they have their own farm in Gingin too.
  • Supporting Local is a big thing for Theo and he uses an array of their meats in his Pizzerias, though his favourite is their Italian sausage.
  • Princi Butchers has been using the same recipe for their Pork and Fennel Italian sausages since 1974. When something is that good you just don’t change it.
  • The art of Butchering has been passed down through generations of the Princi family.
  • This misconception of sausages is that they are packed with fillers, though as Pasquale Princi says, ‘you only get what you put in’ and Princi uses free range pork, some herbs and salt a few secret family ingredients along with passion and being proud of creating a great product.
